  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large mixing bowl, cream the softened butter and powdered sugar until light and fluffy.
  4. Add the egg and mix well. Then, stir in the pandan extract until fully incorporated.
  5. Gradually add the flour mixture to the wet ingredients, mixing until combined. If using, fold in the shredded coconut.
  6. Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes, or until the edges are lightly golden. The centers may appear soft, but they will firm up as they cool.
  8. Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
