Ingredients

  • 1 cup unsalted butter, softened
  • ¾ cup granulated sugar
  • ¾ cup brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 cup powder ube (ube powder)
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup crushed Oreos (about 8-10 cookies)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream the softened butter, granulated sugar, and brown sugar together until fluffy and well combined.
  3. Add the eggs one at a time, mixing until fully incorporated after each addition. Then, stir in the vanilla extract.
  4. In a separate bowl, whisk together the all-purpose flour, powder ube, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined. Be careful not to overmix.
  6. Fold in the crushed Oreos until evenly distributed throughout the cookie dough.
  7. Scoop tablespoon-sized portions of the dough and place them on the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake in the preheated oven for 12-15 minutes or until the edges are set and the tops are lightly golden. The centers may look slightly underbaked, but they'll firm up as they cool.
  9. Allow cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
  10. crushed Oreos: crush Oreos into small pieces for mixing into the dough.
