Ingredients

  • 2 boneless, skinless chicken breasts (about 1 lb)
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon dried Italian herbs
  • Salt and pepper to taste
  • 1 cup broccoli florets
  • 1 cup baby carrots
  • 1 cup cooked quinoa or rice (for serving)

Instructions

  1. Preheat your air fryer to 380°F (193°C) for about 5 minutes while you prepare the chicken and vegetables.
  2. In a large bowl, toss the chicken breasts with olive oil, garlic powder, onion powder, paprika, dried Italian herbs, salt, and pepper until evenly coated.
  3. Place the seasoned chicken breasts in the air fryer basket, making sure they are not overlapping, and cook for 12-15 minutes or until the internal temperature reaches 165°F (74°C). Flip halfway through cooking for even browning.
  4. While the chicken cooks, prepare the vegetables by tossing the broccoli florets and baby carrots in a bowl with a drizzle of olive oil, salt, and pepper.
  5. After the chicken has cooked for about 5 minutes, add the seasoned broccoli and carrots to the air fryer basket around the chicken.
  6. Continue cooking everything together for the remaining 7-10 minutes until the vegetables are tender and slightly crispy.
  7. Remove the chicken and vegetables from the air fryer and let the chicken rest for a few minutes before slicing it.
  8. Serve the sliced chicken over a bed of cooked quinoa or rice, alongside the roasted vegetables for a complete meal.
