Ingredients
- 1 cup grated zucchini
- 1 cup grated carrots
- 1/2 cup finely chopped bell pepper
- 1/4 cup finely chopped green onions
- 1/2 cup whole wheat flour
- 1/2 cup rolled oats
- 2 large eggs
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon smoked paprika
- Cooking spray or olive oil for greasing
Instructions
- In a large mixing bowl, combine the grated zucchini, grated carrots, chopped bell pepper, and green onions, mixing well to incorporate all the vegetables.
- Add the whole wheat flour, rolled oats, eggs, garlic powder, onion powder, salt, black pepper, and smoked paprika to the vegetable mixture, stirring until everything is evenly combined into a thick batter.
- Preheat your air fryer to 375°F (190°C) for about 5 minutes while you prepare the fritters.
- Scoop about 2 tablespoons of the vegetable mixture and form it into a patty. Repeat this process until all the mixture is shaped into fritters.
- Lightly spray the air fryer basket with cooking spray or brush it with olive oil to prevent sticking, then arrange the fritters in a single layer, ensuring they don’t touch each other.
- Cook the fritters in the preheated air fryer for 12-15 minutes, flipping them halfway through, until they are golden brown and crispy.
- Once cooked, remove the fritters from the air fryer and let them cool slightly before serving. Enjoy them warm with your favorite dipping sauce!
