Ingredients

  • 1 cup grated zucchini
  • 1 cup grated carrots
  • 1/2 cup finely chopped bell pepper
  • 1/4 cup finely chopped green onions
  • 1/2 cup whole wheat flour
  • 1/2 cup rolled oats
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon smoked paprika
  • Cooking spray or olive oil for greasing

Instructions

  1. In a large mixing bowl, combine the grated zucchini, grated carrots, chopped bell pepper, and green onions, mixing well to incorporate all the vegetables.
  2. Add the whole wheat flour, rolled oats, eggs, garlic powder, onion powder, salt, black pepper, and smoked paprika to the vegetable mixture, stirring until everything is evenly combined into a thick batter.
  3. Preheat your air fryer to 375°F (190°C) for about 5 minutes while you prepare the fritters.
  4. Scoop about 2 tablespoons of the vegetable mixture and form it into a patty. Repeat this process until all the mixture is shaped into fritters.
  5. Lightly spray the air fryer basket with cooking spray or brush it with olive oil to prevent sticking, then arrange the fritters in a single layer, ensuring they don’t touch each other.
  6. Cook the fritters in the preheated air fryer for 12-15 minutes, flipping them halfway through, until they are golden brown and crispy.
  7. Once cooked, remove the fritters from the air fryer and let them cool slightly before serving. Enjoy them warm with your favorite dipping sauce!
