  1. In a large skillet, heat olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
  2. Stir in the minced garlic, sliced bell pepper, and zucchini. Cook for an additional 2-3 minutes until vegetables are tender.
  3. Add the spaghetti, diced tomatoes (with their juice), vegetable broth, Italian seasoning, salt, and pepper to the skillet.
  4. Bring the mixture to a boil, then reduce the heat to a simmer. Cover and cook for about 10-12 minutes, stirring occasionally until the pasta is al dente and the liquid has mostly absorbed.
  5. Stir in the fresh spinach and cook for another 2-3 minutes until wilted.
