One Pan Pasta Dinner: Quick and Easy Weeknight Meal
This one pan pasta dinner is the perfect solution for busy weeknights. Made with fresh ingredients and cooked all in one pan, it’s both delicious and easy to prepare.

Ingredients
12 oz spaghetti
2 tablespoons olive oil
1 medium onion, diced
3 cloves garlic, minced
1 bell pepper, sliced
1 zucchini, sliced
1 can (14 oz) diced tomatoes, undrained
4 cups vegetable broth
1 teaspoon Italian seasoning
Salt and pepper to taste
1 cup fresh spinach
1/2 cup grated Parmesan cheese
Fresh basil for garnish
Instructions
In a large skillet or pan, heat olive oil over medium heat. Add diced onion and sauté until translucent, about 3 minutes.
Stir in minced garlic and sliced bell pepper; cook for an additional 2 minutes until fragrant.
Add sliced zucchini, diced tomatoes (with juice), spaghetti, vegetable broth, Italian seasoning, salt, and pepper to the pan.
Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 12-15 minutes, stirring occasionally, until the pasta is al dente and most of the liquid has absorbed.
Stir in fresh spinach and cook until wilted, about 2 minutes.
Remove from heat and mix in grated Parmesan cheese until melted and creamy.
Serve hot, garnished with fresh basil and additional Parmesan if desired.
