  1. On a clean surface, make a mound with the flour and create a well in the center.
  2. Crack the eggs into the well, then add the salt and olive oil.
  3. Using a fork, whisk the eggs gently, gradually incorporating the flour from the edges of the well.
  4. Knead the dough by hand for about 8-10 minutes until it’s smooth and elastic. If the dough is too dry, add a tablespoon of water.
  5. Wrap the dough in plastic wrap and let it rest for 30 minutes at room temperature.
  6. After resting, divide the dough into four pieces. Roll each piece out thinly using a pasta machine or a rolling pin, dusting with semolina flour to prevent sticking.
  7. Cut the rolled-out dough into your desired pasta shape (fettuccine, tagliatelle, etc.).
  8. Cook the fresh pasta in a large pot of boiling salted water for 2-4 minutes until al dente, then drain and serve with your favorite sauce.
