Authentic Chicken Biryani Recipe for Flavorful Dining

2 cups basmati rice
1 lb chicken, cut into pieces
1 large onion, thinly sliced
2 tomatoes, chopped
1/2 cup plain yogurt
4 cloves garlic, minced
1 tablespoon ginger, minced
2 green chilies, slit
1/4 cup chopped fresh cilantro
1/4 cup chopped fresh mint
3-4 whole cloves
3-4 green cardamom pods
1-2 bay leaves
1 stick cinnamon
1 teaspoon cumin seeds
1 teaspoon coriander powder
1/2 teaspoon turmeric powder
1 teaspoon garam masala
Salt to taste
4 cups water
2 tablespoons ghee or oil
Instructions
Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
In a large pot, heat ghee or oil over medium heat. Add sliced onions and sauté until golden brown.
Add minced garlic, ginger, and green chilies; sauté for a minute until fragrant.
Stir in chopped tomatoes, turmeric, coriander powder, and salt. Cook until tomatoes soften.
Add the chicken pieces and cook until they are no longer pink, then mix in yogurt and cook for another 5 minutes.
Add cilantro, mint, and garam masala. Stir well and cook for an additional 2 minutes.
In a separate pot, bring 4 cups of water to a boil. Drain the soaked rice and add it to the boiling water. Cook until the rice is 70% done, then drain the excess water.
Layer the partially cooked rice over the chicken mixture in the large pot. Add the whole spices (cloves, cardamom, bay leaves, cinnamon) on top.
Cover the pot tightly with a lid and reduce the heat to low. Cook for 20-25 minutes until the rice is fully cooked and the flavors meld together.
Remove from heat and let it sit for 10 minutes before serving. Gently fluff the biryani with a fork and serve with raita or salad.
