  1. In a bowl, combine sliced chicken, soy sauce, rice vinegar, and cornstarch. Mix well and let it marinate for 15 minutes.
  2. Heat vegetable oil in a large skillet or wok over medium-high heat.
  3. Add the marinated chicken to the skillet and stir-fry until golden brown, about 5-7 minutes. Remove and set aside.
  4. In the same skillet, add garlic, ginger, and Sichuan peppercorns. Sauté for 1-2 minutes until fragrant.
  5. Add bell pepper, broccoli, and snap peas. Stir-fry for another 3-4 minutes until the vegetables are tender-crisp.
  6. Return the chicken to the skillet, add chili paste, and mix everything together. Cook for an additional 2-3 minutes.
  7. Drizzle sesame oil over the stir fry, season with salt and pepper, and toss to combine.
  8. Garnish with chopped green onions before serving.
