1 cup sushi rice
1 1/4 cups water
2 tablespoons rice vinegar
1 tablespoon sugar
1 teaspoon salt
4 seaweed sheets (nori)
1/2 pound ground beef or turkey
1 tablespoon taco seasoning
1/2 cup shredded lettuce
1/2 cup diced tomatoes
1/4 cup shredded cheddar cheese
1/4 cup sour cream
1 avocado, sliced
Soy sauce, for dipping
Instructions
Rinse the sushi rice under cold water until the water runs clear. Combine with 1 1/4 cups water in a rice cooker and cook according to the manufacturer's instructions.
Once the rice is cooked, mix rice vinegar, sugar, and salt in a small bowl until dissolved. Fold this mixture into the warm rice and let it cool to room temperature.
In a skillet, cook the ground beef or turkey over medium heat until browned. Drain excess fat, add taco seasoning, and follow package instructions for preparation. Set aside.
Lay a sheet of nori on a bamboo sushi mat. Wet your hands to prevent sticking and spread a thin layer of sushi rice evenly over the nori, leaving a small border at the top.
In the center of the rice, add a line of cooked taco meat, lettuce, tomatoes, cheese, and sliced avocado. Drizzle with sour cream.
Using the bamboo mat, carefully roll the sushi away from you, applying gentle pressure to form a tight roll. Seal the edge with a little water.
Slice the sushi roll into bite-sized pieces with a sharp knife. Serve with soy sauce for dipping.
