1 pound boneless, skinless chicken breast, diced
2 tablespoons olive oil
1 bell pepper, sliced
1 cup broccoli florets
1 cup snap peas
2 cloves garlic, minced
1 tablespoon soy sauce
1 tablespoon honey
1 teaspoon ginger, grated
Salt and pepper to taste
Cooked brown rice or quinoa for serving
Sesame seeds for garnish (optional)
Chopped green onions for garnish (optional)
Instructions
Heat olive oil in a large skillet over medium-high heat.
Add the diced chicken and season with salt and pepper. Cook for about 5-7 minutes or until the chicken is browned and cooked through.
Stir in the minced garlic and ginger, cooking for an additional minute until fragrant.
Add the sliced bell pepper, broccoli florets, and snap peas to the skillet. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
In a small bowl, mix together the soy sauce and honey. Pour this mixture over the chicken and vegetables, tossing to coat evenly.
Cook for another 2 minutes until everything is heated through and well combined.
