  1. Lay out the whole wheat tortillas on a clean surface.
  2. Spread a generous layer of hummus on each tortilla, leaving a small border around the edges.
  3. Layer the spinach leaves evenly on top of the hummus.
  4. Add the sliced cucumber, bell pepper, shredded carrot, sliced avocado, and halved cherry tomatoes on each tortilla.
  5. Sprinkle with salt and pepper to taste, and drizzle olive oil if desired.
  6. Carefully roll each tortilla into a wrap, tucking in the sides as you go.
  7. Slice the wraps in half diagonally and serve immediately or wrap in foil for later.
