1 lb boneless, skinless chicken breasts, sliced
1 red bell pepper, sliced
1 green bell pepper, sliced
1 medium onion, sliced
2 tablespoons olive oil
2 teaspoons chili powder
1 teaspoon cumin
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
8 small flour tortillas
1 cup shredded cheese (cheddar or Mexican blend)
1/2 cup sour cream (for serving)
1/4 cup fresh cilantro, chopped (for garnish)
Instructions
Preheat the oven to 400°F (200°C).
In a large bowl, combine sliced chicken, bell peppers, onion, olive oil, chili powder, cumin, garlic powder, salt, and pepper. Toss until everything is well coated.
