  1. Preheat your oven to 400°F (200°C).
  2. In a medium saucepan, bring chicken broth or water to a boil. Add quinoa, reduce heat to low, cover, and simmer for 15 minutes or until liquid is absorbed.
  3. While the quinoa cooks, season the chicken breasts with olive oil, garlic powder, paprika, salt, and pepper. Place them on a baking sheet.
  4. Add the broccoli, bell pepper, and zucchini to the baking sheet with the chicken. Drizzle with a little more olive oil and season with salt and pepper.
  5. Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and vegetables are tender.
  6. Once cooked, remove from the oven and let the chicken rest for 5 minutes. Fluff the quinoa with a fork and stir in lemon juice.
  7. Slice the chicken breasts and serve over a bed of quinoa with the roasted vegetables. Garnish with fresh parsley.
