  3. Drizzle the olive oil over the vegetables, then sprinkle with garlic powder, onion powder, salt, pepper, and Italian herbs (if using).
  4. Toss the vegetables until they are well-coated with the oil and seasonings.
  5. Spread the mixed vegetables evenly on a baking sheet lined with parchment paper.
  6. Roast in the preheated oven for 20 minutes, stirring halfway through for even cooking.
  7. If desired, sprinkle shredded cheese over the vegetables during the last 5 minutes of roasting.
  8. Once done, remove from the oven and let cool slightly before serving to kids.
