This gluten free dinner recipe features a vibrant quinoa and vegetable stir-fry that's both healthy and satisfying. Packed with flavor and nutrients,...
Ingredients
- 1 cup quinoa, rinsed
- 2 cups vegetable broth
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 cup broccoli florets
- 1 cup snap peas
- 2 carrots, julienned
- 2 tablespoons gluten free soy sauce
- 1 tablespoon sesame oil
- 1 teaspoon ground ginger
- Salt and pepper to taste
- Sesame seeds for garnish
Instructions
- In a medium saucepan, combine the rinsed quinoa and vegetable broth, then bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes until the quinoa is fluffy and all the broth is absorbed.
- While the quinoa cooks, heat olive oil in a large skillet over medium heat. Add the diced onion and minced garlic, sautéing for about 2-3 minutes until the onion becomes translucent.
- Stir in the diced red bell pepper, broccoli florets, snap peas, and julienned carrots. Cook for another 5-7 minutes, stirring occasionally, until the vegetables are tender yet crisp.
- Once the vegetables are cooked, add the cooked quinoa to the skillet, followed by the gluten free soy sauce, sesame oil, and ground ginger. Mix everything together until well combined.
- Season with salt and pepper to taste, cooking for an additional 2 minutes to allow the flavors to meld.
- Remove from heat and serve warm, garnished with sesame seeds.
