  1. In a large pot, heat the vegetable oil over medium heat. Add the pork belly and sauté until browned.
  2. Add the quartered onion and tomatoes to the pot, cooking until softened.
  3. Pour in the water and bring to a boil. Skim off any scum that rises to the top.
  4. Add the tamarind paste (or fresh tamarind if using), fish sauce, and green chili peppers. Stir well.
  5. Lower the heat and let it simmer for about 45 minutes to 1 hour, or until the pork is tender.
  6. Add the sliced radish and long green beans, cooking for an additional 10 minutes.
  7. Finally, add the water spinach (kangkong) and season with salt and pepper to taste. Cook for another 2-3 minutes.
  8. Serve hot with steamed rice.
