  1. In a large pot, combine the pork belly and water. Bring to a boil over medium heat.
  2. Skim off any foam that rises to the surface, then reduce the heat to low and add the onion and tomatoes. Simmer for about 30 minutes until the pork is tender.
  3. Add the radish and long green beans to the pot. Continue to simmer for another 10 minutes.
  4. Stir in the tamarind paste or fresh tamarind and fish sauce. Adjust the seasoning with salt and pepper to taste.
  5. Add the green chili peppers and water spinach. Cook for an additional 5 minutes until the vegetables are tender.
  6. Remove from heat and let it sit for a few minutes before serving. Enjoy your Sinigang na Baboy hot with steamed rice.
