  1. In a large bowl, combine the shredded chicken, bell peppers, corn, cumin, paprika, salt, and black pepper. Mix well.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  3. Place one flour tortilla in the skillet and spread half of the chicken and veggie mixture over one half of the tortilla.
  4. Sprinkle half of the shredded cheddar cheese on top of the mixture, then fold the tortilla over to create a half-moon shape.
  5. Cook for 3-4 minutes on each side, or until the tortilla is golden brown and the cheese is melted.
  6. Repeat the process with the remaining tortilla and filling ingredients.
  7. Cut the quesadillas into wedges and serve warm with sour cream and salsa on the side.
