Quick Healthy Dinners for Kids: Cheesy Veggie Quesadillas

Ingredients
4 whole wheat tortillas
1 cup shredded cheddar cheese
1 cup spinach, chopped
1 cup bell peppers, diced
1 small zucchini, grated
1/2 cup corn (canned or frozen)
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper to taste
Sour cream for serving (optional)
Salsa for serving (optional)
Instructions
In a large mixing bowl, combine the chopped spinach, diced bell peppers, grated zucchini, corn, garlic powder, onion powder, salt, and pepper.
Heat olive oil in a non-stick skillet over medium heat.
Place one tortilla in the skillet, sprinkle half of the cheese over the tortilla, and spoon half of the veggie mixture on top.
Top with another tortilla and cook for about 3-4 minutes until the bottom is golden brown.
Carefully flip the quesadilla and cook for another 3-4 minutes until the other side is golden and the cheese is melted.
Remove from skillet, slice into wedges, and serve with sour cream and salsa if desired.
Repeat with the remaining tortillas and filling to make a second quesadilla.
