Ingredients
2 cups mixed vegetables (bell peppers, broccoli, and snap peas)
1 pound boneless chicken breast, sliced
3 tablespoons soy sauce
1 tablespoon sesame oil
2 cloves garlic, minced
1 teaspoon ginger, grated
1 tablespoon cornstarch
1/2 cup chicken broth
2 tablespoons vegetable oil
Cooked rice or noodles (for serving)
Sesame seeds (for garnish)
Green onions, sliced (for garnish)
Instructions
In a bowl, combine the sliced chicken breast with cornstarch and 1 tablespoon of soy sauce. Mix well and let it marinate for 10 minutes.
Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Add the marinated chicken and cook until golden brown, about 5-7 minutes. Remove the chicken from the skillet and set aside.
Add the garlic and ginger to the skillet, stirring for 30 seconds until fragrant.
Return the chicken to the skillet and pour in the chicken broth and remaining soy sauce. Stir everything to combine and let it simmer for another 2-3 minutes.
Remove from heat and drizzle with sesame oil. Serve over cooked rice or noodles and garnish with sesame seeds and sliced green onions.
