Ingredients
2 ribeye steaks (1 inch thick)
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon fresh rosemary, chopped
2 cups baby potatoes, halved
1/4 cup unsalted butter
1/4 cup milk
1 bunch asparagus, trimmed
1 tablespoon balsamic vinegar
1 teaspoon dried thyme
Fresh parsley, for garnish
Instructions
Preheat your grill to medium-high heat.
In a small bowl, mix olive oil, minced garlic, salt, pepper, and chopped rosemary. Rub this mixture over the steaks and let them marinate for 15 minutes.
Meanwhile, boil baby potatoes in salted water until tender, about 15 minutes. Drain and mash with butter and milk until smooth. Set aside.
Toss asparagus with balsamic vinegar, dried thyme, salt, and pepper. Place on a baking sheet and roast in the oven at 400°F for 10-12 minutes.
Grill the steaks for about 4-5 minutes on each side for medium-rare, adjusting time for your preferred doneness.
Remove steaks from the grill and let them rest for 5 minutes before slicing.
Serve the grilled steak alongside garlic mashed potatoes and roasted asparagus, garnished with fresh parsley.
