  1. In a small bowl, whisk together olive oil, lemon juice, lemon zest, minced garlic, oregano, thyme, salt, and pepper.
  2. Place the chicken breasts in a zip-top bag or shallow dish and pour the marinade over the chicken. Seal or cover and marinate for at least 15 minutes.
  3. Preheat the grill to medium-high heat. Remove the chicken from the marinade and discard the excess marinade.
  4. Grill the chicken for 6-7 minutes on each side, or until fully cooked and the internal temperature reaches 165°F (75°C).
  5. In the meantime, assemble the mixed greens and top with halved cherry tomatoes and feta cheese, if using.
  6. Once the chicken is done, let it rest for a few minutes before slicing it into strips.
  7. Serve the sliced chicken over the salad with lemon wedges on the side.
