Ingredients

  • 2 cups rice flour
  • 1 cup coconut milk
  • 1 cup water
  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 3 large eggs
  • 1/4 cup melted butter
  • 1/2 cup grated coconut (fresh or dried)
  • 2 salted eggs, sliced
  • 1/2 cup grated cheese (preferably cheddar)
  • Banana leaves (for lining the pan)

Instructions

  1. Preheat your oven to 375°F (190°C) and line a round baking pan with banana leaves, leaving some overhang to cover the top later.
  2. In a large mixing bowl, combine the rice flour, sugar, baking powder, and salt, then whisk until well blended.
  3. In another bowl, beat the eggs and then add the coconut milk and water, mixing well before incorporating the melted butter.
  4. Gradually pour the wet mixture into the dry ingredients, stirring until a smooth batter forms.
  5. Pour half of the batter into the prepared pan, then sprinkle the grated coconut evenly over it. Follow with the sliced salted eggs and half of the grated cheese.
  6. Top with the remaining batter, spreading it evenly, and then place the remaining cheese on top.
  7. Cover the pan with the overhanging banana leaves, and bake in the preheated oven for about 30-35 minutes or until the cake is set and a toothpick inserted in the center comes out clean.
  8. Allow the bibingka to cool slightly before slicing, and serve warm, optionally topped with more grated coconut or butter.
