4 boneless, skinless chicken breasts
2 tablespoons olive oil
3 cloves garlic, minced
1 cup sun-dried tomatoes (packed in oil), chopped
1 cup heavy cream
1 cup chicken broth
2 cups fresh spinach
1 teaspoon Italian seasoning
Salt and pepper, to taste
Grated Parmesan cheese, for serving
Fresh basil, for garnish (optional)
Instructions
Prep the Chicken: Season the chicken breasts with salt and pepper on both sides.
Sear the Chicken: In a large skillet, heat the olive oil over medium heat. Add the chicken breasts and sear for about 5-6 minutes on each side, until fully cooked (internal temperature should reach 74°C/165°F). Remove the chicken from the skillet and set aside.
Make the Sauce: In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant. Add the sun-dried tomatoes, heavy cream, and chicken broth. Stir to combine and bring to a gentle simmer.
Add Spinach and Seasoning: Add the fresh spinach and Italian seasoning to the skillet. Cook until the spinach is wilted, about 2-3 minutes. Season with salt and pepper to taste.
Combine Chicken and Sauce: Return the cooked chicken to the skillet, coating it in the creamy sauce. Let it simmer for an additional 2-3 minutes.
