  1. In a large pot, combine pork and water. Bring to a boil and skim off the scum that rises to the surface.
  2. Add the quartered onion and tomatoes to the pot. Reduce heat and simmer for about 45 minutes or until the pork is tender.
  3. Once the pork is tender, add the sliced radish and green beans. Cook for another 5-7 minutes until the vegetables are tender.
  4. Stir in the tamarind paste (or fresh tamarind juice) and green chili peppers. Adjust the sourness to your preference.
  5. Add the water spinach (or bok choy) and cook for an additional 2-3 minutes until the greens are wilted.
  6. Season with fish sauce, salt, and pepper to taste. Serve hot with steamed rice.
