  3. While the quinoa cooks, season the chicken breast with olive oil, garlic, oregano, paprika, salt, and pepper. Place in a baking dish.
  4. Arrange the mixed vegetables around the chicken in the baking dish. Drizzle with additional olive oil and season with salt and pepper.
  5. Bake for 25-30 minutes or until the chicken is cooked through and vegetables are tender.
  6. Once the quinoa is done, fluff with a fork and stir in the lemon juice.
  7. Serve the chicken and vegetables over a bed of quinoa, garnished with fresh parsley.
