  1. In a large pot, combine the pork belly and water. Bring to a boil over medium heat.
  2. Once boiling, reduce the heat and let it simmer for about 45 minutes, skimming off any foam that rises to the surface.
  3. Add the quartered onion and tomatoes to the pot, and continue to simmer for an additional 10 minutes.
  4. Stir in the radish and green chili peppers, cooking for another 5 minutes until tender.
  5. Add the tamarind paste (or fresh tamarind pods) and fish sauce, adjusting the sourness to your preference.
  6. Finally, add the string beans and water spinach, cooking for another 3-5 minutes until the veggies are just tender.
  7. Season with salt and pepper to taste before serving hot.
