  1. In a medium saucepan, combine quinoa and chicken broth. Bring to a boil, then reduce heat, cover, and simmer for about 15 minutes or until quinoa is fluffy.
  2. While the quinoa cooks, heat olive oil in a large skillet over medium heat. Season chicken breasts with garlic powder, Italian seasoning, salt, and pepper.
  3. Add the seasoned chicken to the skillet and cook for 6-7 minutes on each side, or until the chicken is cooked through and reaches an internal temperature of 165°F.
  4. Add broccoli florets and cherry tomatoes to the skillet during the last 5 minutes of cooking the chicken, stirring occasionally until the vegetables are tender.
  5. Once the quinoa is done, fluff it with a fork and mix in the lemon juice.
  6. Serve the chicken and vegetables over the lemon quinoa, garnished with fresh parsley.
