Honey Garlic Salmon with Roasted Vegetables

This Honey Garlic Salmon with Roasted Vegetables recipe features almon fillets (about 6 oz each), 4 cup honey, 4 cup soy sauce (use low-sodium if preferred) ...

Ingredients

  • 4 salmon fillets (about 6 oz each)
  • 1/4 cup honey
  • 1/4 cup soy sauce (use low-sodium if preferred)
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, minced (optional)
  • 1 tablespoon olive oil
  • 2 cups broccoli florets
  • 2 cups bell peppers, sliced (use multicolor for variety)
  • 1 small zucchini, sliced
  • Salt and pepper, to taste
  • 1 teaspoon sesame seeds (for garnish, optional)
  • Fresh chopped parsley (for garnish, optional)

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C). If using convection, consider reducing the temperature to 375°F (190°C).
  2. Prepare the Honey Garlic Sauce: In a small bowl, whisk together honey, soy sauce, minced garlic, and ginger (if using). Set aside.
  3. Prepare the Vegetables: On a large baking sheet, toss the broccoli, bell peppers, and zucchini with olive oil. Season with salt and pepper to taste. Spread the vegetables out in an even layer.
  4. Marinate the Salmon: Place the salmon fillets in a shallow dish and pour half of the honey garlic sauce over them. Allow to marinate for about 10-15 minutes.
  5. Roast the Vegetables: Place the baking sheet with the vegetables in the oven and roast for 10 minutes.
  6. Add Salmon to the Oven: After 10 minutes, remove the baking sheet and create space for the salmon fillets. Place the marinated salmon on the baking sheet alongside the vegetables, and drizzle the remaining honey garlic sauce over the salmon.
  7. Continue Roasting: Return the baking sheet to the oven and roast for an additional 15-20 minutes, or until the salmon is cooked through (internal temperature should be 145°F or 63°C) and the vegetables are tender.
  8. Serve: Once done, carefully remove the baking sheet from the oven. Garnish with sesame seeds and fresh chopped parsley if desired. Serve the salmon with the roasted vegetables on the side.
