2 cups cooked pasta (penne or rotini)
1 pound ground beef
1 can (15 oz) diced tomatoes
1 can (10.5 oz) cream of mushroom soup
1 cup shredded cheddar cheese
1 cup frozen mixed vegetables
1 small onion, chopped
2 cloves garlic, minced
1 teaspoon Italian seasoning
Salt and pepper to taste
1/2 cup milk
1 cup breadcrumbs
2 tablespoons olive oil
Fresh parsley for garnish (optional)
Instructions
Preheat your oven to 350°F (175°C).
In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, cooking until softened.
Add the ground beef to the skillet. Brown the meat and drain any excess fat.
Stir in the diced tomatoes, cream of mushroom soup, mixed vegetables, milk, Italian seasoning, salt, and pepper. Mix well.
In a large mixing bowl, combine the cooked pasta with the beef mixture. Stir until the pasta is well coated.
Transfer the mixture into a greased 9x13 inch baking dish. Top with shredded cheddar cheese and breadcrumbs.
Cover with foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and the breadcrumbs are golden.
Let the casserole cool for a few minutes before serving. Garnish with fresh parsley, if desired.
