Ingredients

  • 2 lbs pork belly, cut into cubes
  • 1 cup coconut milk
  • 1/2 cup soy sauce
  • 1/4 cup vinegar
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 2-3 bay leaves
  • 1 teaspoon black peppercorns
  • 1 tablespoon cooking oil
  • 1 tablespoon brown sugar
  • Salt to taste
  • 1-2 green chili peppers, sliced (optional)
  • 1 cup water
  • Chopped green onions for garnish

Instructions

  1. In a large bowl, combine the pork belly with soy sauce, vinegar, minced garlic, and chopped onion. Marinate for at least 30 minutes for best flavor.
  2. Heat oil in a large pot over medium heat, then add the marinated pork belly along with the marinade. Cook for about 5-7 minutes until the meat is browned.
  3. Pour in the water and add the bay leaves and black peppercorns. Bring to a boil, then reduce the heat to low and simmer for 30 minutes until the pork is tender.
  4. Stir in the coconut milk and brown sugar, then season with salt to taste. If you prefer a spicy kick, add the sliced green chili peppers.
  5. Continue to simmer for another 10-15 minutes, allowing the sauce to thicken and the flavors to meld together.
  6. Once cooked, remove from heat and let it rest for a few minutes before serving.
  7. Garnish with chopped green onions and serve hot over steamed rice.
