These Cheesy Veggie Quesadillas are a perfect kid friendly dinner option, packed with colorful vegetables and ooey-gooey cheese. Quick to prepare and fun to eat, they’ll be a hit with the whole family!

Ingredients
4 whole wheat tortillas
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
1/2 cup finely chopped bell peppers (red, yellow, green)
1/2 cup finely chopped spinach
1/2 cup corn (canned or frozen)
1 tablespoon olive oil
1 teaspoon garlic powder
1/2 teaspoon cumin
Salt and pepper to taste
Sour cream for serving (optional)
Salsa for serving (optional)
Instructions
In a large bowl, combine the chopped bell peppers, spinach, corn, garlic powder, cumin, salt, and pepper.
Heat olive oil in a large skillet over medium heat. Add the veggie mixture and sauté for about 3-4 minutes until softened.
Lay one tortilla flat in the skillet. Sprinkle half of the cheddar and mozzarella cheese evenly over one half of the tortilla.
Spoon the veggie mixture over the cheese, then sprinkle the remaining cheese on top before folding the tortilla in half.
Cook for 2-3 minutes on each side, or until the tortilla is golden brown and the cheese is melted.
Repeat the process with the remaining tortillas.
Cut the quesadillas into wedges, serve warm with sour cream and salsa on the side.
