1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
2 cups broccoli florets
1 cup carrots, sliced
1 cup cherry tomatoes, halved
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
Salt and pepper to taste
1 cup shredded cheddar cheese
1/2 cup chicken broth
1 teaspoon dried Italian herbs
Instructions
Preheat your oven to 400°F (200°C).
In a large mixing bowl, toss the chicken pieces with olive oil, garlic powder, onion powder, paprika, salt, and pepper until well coated.
Spread the seasoned chicken evenly on a large baking sheet.
Add the broccoli, carrots, and cherry tomatoes to the baking sheet, and sprinkle with dried Italian herbs. Pour chicken broth over the top.
Bake in the preheated oven for 20 minutes or until the chicken is cooked through and the veggies are tender.
Remove the baking sheet from the oven and sprinkle the shredded cheddar cheese evenly over the chicken and vegetables.
Return to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.
