Ingredients
2 lbs pork belly, cut into chunks
8 cups water
1 medium onion, quartered
2 tomatoes, quartered
1 radish (labanos), sliced
1 cup string beans (sitaw), cut into 2-inch pieces
2 cups water spinach (kangkong)
2-3 green chili peppers (siling pangsigang)
1 cup tamarind paste or 1 cup fresh tamarind pods
Fish sauce (patis) to taste
Salt to taste
Pepper to taste
Instructions
In a large pot, combine pork belly and water. Bring to a boil over medium heat.
Skim off any scum that rises to the surface, then add the quartered onion and tomatoes. Let it simmer for about 30 minutes or until the pork is tender.
Add the radish and continue to simmer for another 5-10 minutes until the radish is tender.
Stir in the tamarind paste (or fresh tamarind) and green chili peppers. Adjust the sourness by adding more tamarind if desired.
Add the string beans and cook for an additional 5 minutes until they are tender.
Finally, stir in the water spinach and season with fish sauce, salt, and pepper to taste. Cook for an additional 2 minutes.
