Ingredients
2 ribeye steaks (1 inch thick)
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon fresh rosemary, chopped
4 large potatoes, peeled and cubed
1/2 cup heavy cream
1/4 cup butter
1 teaspoon garlic powder
Salt to taste
Fresh parsley, chopped (for garnish)
Instructions
Preheat your grill to medium-high heat.
In a small bowl, mix together olive oil, minced garlic, salt, black pepper, and chopped rosemary. Rub the mixture onto both sides of the ribeye steaks.
Place the steaks on the grill and cook for about 4-5 minutes on each side for medium-rare, or until desired doneness is reached. Remove from the grill and let rest for 5 minutes.
While the steaks are resting, boil the cubed potatoes in salted water until tender, about 15 minutes. Drain well.
In a large bowl, mash the drained potatoes with heavy cream, butter, garlic powder, and salt until creamy and smooth.
Serve the grilled steaks with a generous scoop of garlic mashed potatoes on the side, garnished with fresh parsley.
