  1. In a large skillet or pan, heat olive oil over medium heat. Add the diced onion and garlic, sautéing until softened, about 2-3 minutes.
  2. Stir in the bell pepper and zucchini, cooking for another 3-4 minutes until they begin to soften.
  3. Add the spaghetti, diced tomatoes (with juices), vegetable broth, Italian seasoning, salt, and pepper to the pan. Bring to a boil.
  4. Reduce heat to a simmer, cover, and cook for 10-12 minutes, stirring occasionally, until the pasta is al dente and the liquid is mostly absorbed.
  5. Stir in the fresh spinach and cook for an additional 2-3 minutes until wilted.
  6. Remove from heat and stir in the grated Parmesan cheese until melted and creamy.
  7. Serve hot, garnished with fresh basil leaves.
