  1. In a blender, combine the rolled oats and milk. Blend until smooth and creamy.
  2. Add the mashed bananas, eggs, vanilla extract, baking powder, cinnamon, and salt to the blender. Blend until fully combined.
  3. Preheat a non-stick skillet over medium heat and add coconut oil.
  4. Pour about 1/4 cup of the batter onto the skillet for each pancake. Cook for 2-3 minutes until bubbles form on the surface, then flip and cook for another 2-3 minutes until golden brown.
  5. Repeat with the remaining batter, adding more coconut oil as needed.
  6. Serve the pancakes warm topped with fresh fruits and a drizzle of maple syrup if desired.
