Date Night Steak Dinner: Perfectly Seared Steak with Sides

Ingredients
2 ribeye steaks (1-inch thick, about 1 pound each)
2 tablespoons olive oil
Salt and pepper to taste
2 cloves garlic, minced
2 sprigs fresh rosemary
1 tablespoon butter
1 pound asparagus, trimmed
1 tablespoon lemon juice
1 tablespoon balsamic vinegar
1 cup baby potatoes, halved
1 tablespoon fresh parsley, chopped
Instructions
Preheat your oven to 400°F (200°C).
In a large oven-safe skillet, heat olive oil over medium-high heat. Season the steaks with salt and pepper on both sides.
Once the oil is hot, add the steaks to the skillet and sear for about 3-4 minutes on each side until a nice crust forms.
Add minced garlic, rosemary, and butter to the skillet, then transfer the skillet to the preheated oven. Cook for an additional 5-7 minutes for medium-rare, or until desired doneness.
While the steak is in the oven, toss the asparagus with lemon juice, balsamic vinegar, salt, and pepper in a separate bowl.
In another pot, boil the halved baby potatoes in salted water for about 10-12 minutes until tender, then drain and toss with parsley, salt, and pepper.
Remove the steak from the oven and let it rest for 5 minutes before slicing.
In the same skillet used for the steak, add the asparagus and sauté for 4-5 minutes until tender-crisp. Serve the steak alongside the asparagus and baby potatoes.
