  1. In a large pot, heat vegetable oil over medium heat and sauté the onions until translucent.
  2. Add the pork belly and cook until it starts to brown, about 5-7 minutes.
  3. Pour in 8 cups of water and bring to a boil. Skim off any foam that rises to the surface.
  4. Add the tomatoes and cook for 10 minutes until softened.
  5. Stir in the tamarind paste (or fresh tamarind) and fish sauce. Let it simmer for 30 minutes, or until the pork is tender.
  6. Add the radish, eggplant, and green chilies. Cook for an additional 5-7 minutes.
  7. Finally, add the water spinach and cook for another 2-3 minutes. Season with salt and pepper to taste.
  8. Serve hot with steamed rice and enjoy this hearty sinigang na baboy!
