12 ounces spaghetti
1 tablespoon olive oil
1 medium onion, diced
3 cloves garlic, minced
1 bell pepper, sliced
2 cups cherry tomatoes, halved
2 cups spinach
1 teaspoon Italian seasoning
1/2 teaspoon red pepper flakes (optional)
4 cups vegetable broth
1 cup grated Parmesan cheese
Salt and pepper to taste
Fresh basil leaves for garnish
Instructions
In a large skillet, heat olive oil over medium heat. Add diced onion and sauté until translucent, about 3-4 minutes.
Stir in minced garlic and sliced bell pepper, cooking for an additional 2 minutes until fragrant.
Add cherry tomatoes, spinach, Italian seasoning, red pepper flakes (if using), and season with salt and pepper. Cook for 2-3 minutes until tomatoes soften.
Pour in the vegetable broth and bring to a boil. Once boiling, add spaghetti, pressing it down to submerge in the liquid.
Reduce heat to a simmer, cover, and cook for 10-12 minutes, stirring occasionally, until pasta is al dente and the liquid has mostly absorbed.
Remove from heat, stir in grated Parmesan cheese until melted and creamy. Adjust seasoning if necessary.
Serve immediately, garnished with fresh basil leaves and additional Parmesan if desired.
