Ingredients
2 cups cooked pasta (elbow or penne)
1 pound ground beef or turkey
1 can (15 oz) diced tomatoes, drained
1 can (10.5 oz) cream of mushroom soup
1 cup shredded cheddar cheese
1 cup frozen mixed vegetables (peas, carrots, corn)
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper to taste
1 tablespoon olive oil
1/2 teaspoon dried Italian herbs
1/4 cup grated Parmesan cheese
1/4 cup breadcrumbs (optional for topping)
Instructions
Preheat your oven to 350°F (175°C).
In a large skillet, heat the olive oil over medium heat. Add the ground beef or turkey and cook until browned, about 5-7 minutes. Drain excess fat.
Stir in the diced tomatoes, cream of mushroom soup, garlic powder, onion powder, Italian herbs, salt, and pepper into the meat mixture. Cook for another 2-3 minutes until combined.
In a large mixing bowl, combine the cooked pasta, meat mixture, frozen mixed vegetables, and half of the cheddar cheese. Mix until everything is well incorporated.
Transfer the mixture to a greased 9x13 inch baking dish. Top with the remaining cheddar cheese, Parmesan cheese, and breadcrumbs if using.
Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes or until the cheese is bubbly and golden brown.
