Ingredients

  • 1.5 kg salmon fillets (skinless)
  • 180 grams plain yogurt (preferably Greek)
  • 90 ml lemon juice
  • 3 tablespoons tandoori masala
  • 6 cloves garlic, minced
  • 3 teaspoons fresh ginger, grated
  • 1.5 teaspoons salt
  • 1.5 teaspoons black pepper
  • 900 grams cauliflower florets
  • 180 ml heavy cream
  • 3 tablespoons unsalted butter
  • 3 teaspoons ground cumin
  • 3 teaspoons ground coriander
  • 3 teaspoons turmeric powder
  • Fresh cilantro leaves for garnish

Instructions

  1. In a bowl, mix yogurt, lemon juice, tandoori masala, garlic, ginger, salt, and black pepper to create a marinade.
  2. Coat the salmon fillets in the marinade and let them rest for at least 30 minutes or overnight in the refrigerator for deeper flavor.
  3. While the salmon marinates, steam the cauliflower florets until tender, approximately 10-15 minutes.
  4. After steaming, drain the cauliflower and transfer it to a blender or food processor. Add heavy cream, butter, cumin, coriander, turmeric, salt, and pepper to blend until smooth.
  5. Preheat the grill or oven to 200°C (400°F). Place the marinated salmon fillets on a lined baking tray.
  6. Bake or grill the salmon for about 15-20 minutes, or until cooked through and flaky.
  7. Serve the tandoori salmon over a generous scoop of spiced cauliflower mash, garnished with fresh cilantro leaves.
