Ingredients
- 2 pounds oxtail, cut into sections
- 1 cup peanut butter
- 1/4 cup rice flour
- 4 cups beef broth
- 1 medium onion, chopped
- 4 cloves garlic, minced
- 2 bananas, sliced (optional)
- 1/2 pound eggplant, sliced
- 1/2 pound green beans, trimmed
- 1/2 cup bagoong (fermented shrimp paste)
- 2 tablespoons vegetable oil
- Salt and pepper to taste
- 2 cups water
Instructions
- In a large pot, heat the vegetable oil over medium heat, then add the chopped onion and minced garlic, sautéing until fragrant and translucent.
- Add the oxtail sections to the pot, browning them on all sides for about 5-7 minutes, then pour in the beef broth and 2 cups of water, bringing the mixture to a boil.
- Lower the heat and let the oxtail simmer for about 2-3 hours or until tender, skimming off any impurities that rise to the surface.
- Once tender, remove the oxtail from the pot and set aside, then strain the broth and return it to the pot, discarding any solids.
- In a separate bowl, mix the peanut butter and rice flour with a small amount of the hot broth to create a smooth paste, then whisk this mixture back into the pot.
- Add the sliced eggplant and green beans to the simmering broth, cooking for about 5-7 minutes until the vegetables are tender but still crisp.
- Return the oxtail to the pot, allowing it to heat through for an additional 5 minutes, and season with salt and pepper to taste.
- Serve the Kare Kare hot, accompanied by bagoong on the side for added flavor.
