Ingredients

  • 2 pounds oxtail, cut into sections
  • 1 cup peanut butter
  • 1/4 cup rice flour
  • 4 cups beef broth
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 2 bananas, sliced (optional)
  • 1/2 pound eggplant, sliced
  • 1/2 pound green beans, trimmed
  • 1/2 cup bagoong (fermented shrimp paste)
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste
  • 2 cups water

Instructions

  1. In a large pot, heat the vegetable oil over medium heat, then add the chopped onion and minced garlic, sautéing until fragrant and translucent.
  2. Add the oxtail sections to the pot, browning them on all sides for about 5-7 minutes, then pour in the beef broth and 2 cups of water, bringing the mixture to a boil.
  3. Lower the heat and let the oxtail simmer for about 2-3 hours or until tender, skimming off any impurities that rise to the surface.
  4. Once tender, remove the oxtail from the pot and set aside, then strain the broth and return it to the pot, discarding any solids.
  5. In a separate bowl, mix the peanut butter and rice flour with a small amount of the hot broth to create a smooth paste, then whisk this mixture back into the pot.
  6. Add the sliced eggplant and green beans to the simmering broth, cooking for about 5-7 minutes until the vegetables are tender but still crisp.
  7. Return the oxtail to the pot, allowing it to heat through for an additional 5 minutes, and season with salt and pepper to taste.
  8. Serve the Kare Kare hot, accompanied by bagoong on the side for added flavor.
