8 oz linguine pasta
1 lb large shrimp, peeled and deveined
2 tbsp olive oil
4 cloves garlic, minced
1/4 tsp red pepper flakes
1/2 cup chicken broth
1/2 cup cherry tomatoes, halved
1 lemon, juiced and zested
Salt and pepper, to taste
2 tbsp fresh parsley, chopped
Grated Parmesan cheese, for serving
Instructions
Cook the linguine pasta according to package instructions until al dente. Drain and set aside.
In a large skillet, heat olive oil over medium heat. Add minced garlic and red pepper flakes, cooking for about 1 minute until fragrant.
Add the shrimp to the skillet, seasoning with salt and pepper. Cook for 2-3 minutes on each side until they turn pink and opaque.
Pour in the chicken broth and bring to a simmer. Add cherry tomatoes, lemon juice, and lemon zest, stirring gently.
Combine the cooked linguine with the shrimp mixture, tossing to coat the pasta evenly with the sauce.
Remove from heat and stir in the fresh parsley. Adjust seasoning if necessary.
