This Quick Lunch Idea features a delicious Mediterranean Quinoa Bowl that is both nutritious and satisfying. Packed with fresh vegetables and a zesty...

Ingredients

  • 1 cup quinoa
  • 2 cups vegetable broth or water
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, finely chopped
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water, then combine it with vegetable broth or water in a medium saucepan. Bring to a boil, reduce the heat to low, cover, and simmer for about 15 minutes until the quinoa is fluffy and the liquid is absorbed.
  2. While the quinoa cooks, prepare the dressing by whisking together olive oil, lemon juice, dried oregano, salt, and pepper in a small bowl. Set aside.
  3. In a large mixing bowl, combine the halved cherry tomatoes, diced cucumber, finely chopped red onion, sliced Kalamata olives, crumbled feta cheese, and chopped parsley.
  4. Once the quinoa has finished cooking, fluff it with a fork and let it cool slightly before adding it to the mixing bowl with the vegetables.
  5. Pour the dressing over the quinoa and vegetable mixture, then toss everything gently until well combined.
  6. Taste and adjust the seasoning with more salt, pepper, or lemon juice if desired.
  7. Serve the Mediterranean Quinoa Bowl immediately or refrigerate it for up to 2 days for a quick and healthy lunch option.
