2 boneless, skinless chicken breasts (about 6 oz each)
2 tablespoons olive oil
Juice and zest of 1 lemon
2 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried thyme
Salt and pepper to taste
1 cup cherry tomatoes, halved
1 cup fresh spinach
1/4 cup feta cheese, crumbled
Fresh parsley, chopped (for garnish)
Instructions
In a small bowl, whisk together olive oil, lemon juice, lemon zest, minced garlic, oregano, thyme, salt, and pepper to create the marinade.
Place the chicken breasts in a resealable bag or shallow dish and pour the marinade over them. Marinate for at least 15 minutes, or up to 1 hour in the refrigerator.
Preheat the grill to medium-high heat. Remove chicken from the marinade and discard the marinade.
Grill the chicken for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken is cooked through.
While the chicken is grilling, in a large skillet over medium heat, sauté the cherry tomatoes and spinach until the spinach is wilted and the tomatoes are soft, about 3-4 minutes.
Slice the grilled chicken and serve it on a plate topped with the sautéed tomatoes and spinach. Sprinkle with crumbled feta cheese and garnish with fresh parsley.
