  1. In a large skillet or pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
  2. Stir in the minced garlic, chopped bell pepper, and sliced zucchini. Cook for an additional 3-4 minutes until the vegetables begin to soften.
  3. Add the spaghetti, diced tomatoes (with juices), vegetable broth, Italian seasoning, salt, and pepper. Bring to a boil.
  4. Reduce the heat to a simmer and cover the pot. Cook for 10-12 minutes, stirring occasionally, until the pasta is al dente and most of the liquid is absorbed.
  5. Stir in the fresh spinach and allow it to wilt, about 1-2 minutes.
  6. Remove from heat and stir in the grated Parmesan cheese until melted and well combined.
  7. Serve hot, garnished with fresh basil if desired.
